Oh My Okra!
Updated: Mar 30, 2022
Okra is a vegetable popular in the South that is generally available year-round. It's an excellent source of vitamin C and a good source of folate, magnesium and fiber.
These tasty vegetables can be steamed, boiled, roasted, grilled, stewed fried or pickled. They generally go well with tomatoes and some spices. Try making a gumbo with okra and you won’t be disappointed! Feel free to freeze okra as well, just don’t forget to blanch it beforehand.
